NORWEGIAN CREAM CAKE

Bløtkake (Norwegian Cream Cake) Recipe 🇳🇴🍰




This traditional Norwegian bløtkake is absolutely delightful! It's a classic and elegant cake, perfect for the 17th of May or any celebration. The combination of soft cake layers, rich whipped cream, and fresh berries makes it a delicious treat. Here's a recipe for you to try:


Ingredients:


Cake Layers:


    🥚 4 large eggs

    🍚 150g (¾ cup) sugar

    🌾 150g (1¼ cup) all-purpose flour

    🧂 1 tsp baking powder

    🌼 1 tsp vanilla extract


Syrup:


    🥛 150ml (2/3 cup) milk

    🍬 2 tbsp sugar

    🌼 1 tsp vanilla extract


Filling:


    🍓 200ml (¾ cup) strawberry jam

    🍓 250g (1 cup) fresh strawberries, sliced

    🍶 400ml (1¾ cup) heavy cream, whipped


Decoration:


    🍓🍇 Fresh berries (strawberries, raspberries, blueberries)

    🌿 Mint leaves (optional)


Instructions:


Prepare the Cake Layers: 🍰


   1. Preheat your oven to 175°C (350°F). Grease and flour two 20cm (8-inch) round cake pans.

   2. In a large bowl, beat the eggs and sugar with an electric mixer until thick and pale.

   3. In another bowl, sift together flour and baking powder.

   4. Gradually fold the flour mixture into the egg mixture. Add vanilla extract.

   5. Divide the batter evenly between the prepared pans.

   6. Bake for 25-30 minutes until a toothpick inserted into the centre comes out clean.

   7. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.


Make the Syrup: 🥛


   1. Heat the milk and sugar in a small saucepan until the sugar dissolves.

   2. Remove from heat, stir in vanilla, and let it cool.


Assemble the Cake: 🏗️


   1. Slice each cake layer horizontally to create four layers in total.

   2. Place one layer on a serving plate, brush generously with the syrup.

   3. Spread a thin layer of strawberry jam, then a layer of whipped cream, and top with sliced strawberries.

   4. Repeat this with the remaining layers, finishing with the top layer.


Decorate the Cake: 🎨


   1. Frost the entire cake with whipped cream.

   2. Decorate the top with fresh berries and mint leaves.
